Line a baking pan with paper towels; set aside. Remove wilted outer leaves from Brussel sprouts; wash and halve.
In a large saucepan, cook Brussel sprouts in boiling water, covered, 1 to 2 minutes; drain. Immediately plunge Brussel sprouts in ice water. Let stand for 3 min. or until cool; drain. Transfer to prepared baking pan. Pat dry with paper towels.
Meanwhile, in a large skillet melt butter over low heat. Cook, stirring often, until the butter begins to brown, about 10 to 12 mins. Add apples and thyme. Cook 2 mins more or until Brussel sprouts are browned and apple is just tender. Transfer to a serving bowl. Sprinkle with toasted walnuts and crushed red pepper if desired.
