A delicious mashed sweet potato recipe great for the holidays or anytime.
Peel and cut sweet potatoes into medium sized chunks and get a pot of water boiling with a few pinch's of salt in the water. Once boiling add sweet potatoes and boil until potatoes are just fork tender, drain. Place potatoes into large mixing bowl, Add 3/4 stick of butter and let melt a bit, add milk, brown sugar, salt and a pinch of cinnamon (to taste) and mix with a hand blender until a smooth consistency is achieved. Add the rest of the butter on top to melt and serve.
OPTIONAL: For that extra special holiday side dish Empty finished sweet potatoes into a baking dish and add marshmallows and chopped pecans and bake on high until marshmallows melt.
The Key is to add just enough cinnamon to give it just a hint of cinnamon in the back drop of the flavors, this is not a desert so you don't want to over do it.
