Try this Brown Sugar Pork chop Rub recipe, or contribute your own.
Suggest a better descriptionThe rub is a combination of white and brown sugar, a little salt, pepper, and paprika, plus minced garlic and a little ginger paste. Mix it all together and adjust to your particular taste preference. Dredge the pork chops in the mix and place in a baking pan or ziplock bag and allow to marinate in the mix at least 24 hours (or up to 48 for stronger flavor). You'll see the mix and chops have created a lot of juice. You'll want to drain that off before baking. Bake as per usual. It's like having a candied pork chop!
I prefer baking them. You can grill too but with all the sugar it can cause the mix to blacken on the chop when grilled. If grilling, be sure to rub oil the grate with vegetable oil so they don't stick!
