Baked sweet potatoes and dark brown sugar add extra layer of depth to the traditional dish.
Preheat oven to 350° and grease a 9-x-13" baking dish with a liberal amount of cooking spray.
Bake sweet potatoes in oven until tender, about 1 hour. Let cool for 15 mins.
De-skin potatoes carefully and add to large bowl.
In the large bowl, stir together sweet potatoes, sugar, butter, vanilla, milk, eggs, and salt until blended.
In a medium bowl, blend with hands the sugar, flour, and butter into small clumps / crumbles then add to pan.
Top with marshmallows.
Bake until center is bubbling and golden brown on top, about 30-45 minutes.
Couple key points:
1. Be sure to buy a soft sweet potato and not a yam, most US stores call these Yams. Basically you are looking for a soft sweet potato with a copper skin and deep bright orange flesh. You can add a couple "real" yams in to increase the density of casserole.
2. Only use real vanilla extract (ie: sonoma syrup co)
3. Same with brown sugar; verify its a real and should have a dark molasse flavour.
