Prepare brownies and cool. Cut or break into 1 inch pieces. The less uniform the better.
Whip up all the cream with vanilla and sugar until peaks form.
Assemble in trifle bowl (if available): start with about 1.5 cups of the whipped cream. Sprinkle 1/2 cup of the brittle over the whipped cream. Layer brownies around edge of bowl and then work toward middle (to create layed look).
Repeat twice until you have 3 layers, ending with whipped cream on top.
Using a small grater, grate chocolate bar over the whipped cream layer. Use as little or as much of the grated chocolate as you prefer.
Add a light sprinkling of brittle chips on top of the grated chocolate.
Refridgerate for at least 2 hours. Scoop into glass bowls or cups to serve.
