A italian twist on a greek favourite
1. Brown mince in frypan over medium heat
2. Add other ingredients except, parmesan, pasta, breadcrumbs & aubergine
3. Simmer for approximately 25min stirring regularly until sauce reduced by about half
4. While sauce is simmering,cook pasta as per instructions on pack
5. Once ready, mix the pasta, sauce & parmesan together
6. Place mix into oven dish
7. Layer aubergine over the top
8. Sprinkle evenly with 1/2 the cheese,then all the breadcrumbs & remainder of the cheese
9. Bake in oven at 180 degrees celsius for 45min
Serve with a fresh garden salad
