In 8 quart Dutch Oven, put in the beans and cover with water about an Inch over the beans. You can soak the beans for approximately 5-6 hours or overnight. This process will help the beans get tender and take less time to cook.
After soaking, bring existing water to a boil and cook beans until tender. Add necessary water if you need to. After beans are tender it is time to add the coconut milk. If you can't find the powdered type you will have to use the can type which will contribute to some of your water needed. If you find the powder coconut milk add it to the pot along with 2 cups of water. If not, just add the two cans of coconut milk to your pot. Now add the rest of the seasoning (garlic, green onion, red onion, regular onion,whole scotch bonnet pepper, salt) along with the butter.
After you have got that back to a boil, add rice and stir to mix all the beans with the rice. Lower the fire to as low as your stove can go and seal your pot lid with aluminum foil. The aluminum foil gives it a great seal for steaming.
After 20 minutes you can start checking the doneness of the rice. Take a small spoon and taste some rice from the top of the pot. If still hard add 1/3 cup of water around the edge of pot. Continue to check every 10 minutes and repeat process until rice is cooked. When rice is cooked, remove pepper and discard. Enjoy.
