Core the apples, then cut the apples in half. Do not peel the apples. Lay them down, flesh down, and slice the apples thin. Add water, sugar and cinnamon to a pot and heat to boiling. Add the apple slices to the pot and cook, stirring often, for about 5min. Remove the apples and let them cool on a plate lined with a paper towel.
Open the crescent rolls and leave them perforated. Cut into strips. Lay about 6 sliced, cooled apples onto a strip, overlapping each other slightly, and with the skin side all facing the same way and barely over the edge. Roll up the strip. It should look like a rose.
Place all rollups into either a muffin tin, or together in a pie plate and bake a 425°F for 15min.
