Suggest a better descriptionIn medium skillet over medium heat, melt butter. Add vegetables and cook, stirring occasionally, until tender crisp, 3-5 minutes
In large bowl combine bread cubes, 1 cup cheese and vegetable mixture. Mix well. Spoon into buttered 13 x 9 baking dish.
In medium bowl, combine eggs, milk and seasonings. Mix well. Pour over bread mixture. Cover and refrigerate 12-24 hours.
Pre-heat oven to 350 degrees. Bake uncovered until golden and puffed, 45-50 min.
Sprinkle remaining 1 cup cheese evenly over top and bake until cheese is melted – about 1 minute. Serves 12.
