A wonderful casserole for weekend company or brunches.
1. Lightly butter each slice of bread.
2. Place bread in a 9 by 13-inch buttered glass baking dish.
3. Brown sausage. Drain and pat with paper towels. Sprinkle sausage over bread.
4. Sprinkle cheese over sausage.
5. Beat eggs. Add salt, dry mustard and half and half. Beat again.
6. Pour egg mixture over bread, sausage and cheese.
7. Cover with foil and refrigerate overnight. At this point, it may be frozen until ready to use. Remove from freezer and thaw overnight in refrigerator.
8. Remove foil. Bake 45 minutes at 350 degrees or until casserole is bubbly and lightly browned on top. This dish reheats easily.
Variation 1: Texas Brunch Casserole
1. Brown sausage with 2 finely chopped onions.
2. Sprinkle 4-ounces drained, chopped green chiles and 1 fresh chopped jalapeno over sausage.
3. Sprinkle with 4 cups grated Monterey Jack cheese.
4. Add 1 teaspoon seasoned salt and 1 rounded teaspoon ground cumin to 6 beaten eggs. Add 1 teaspoon dry mustard and half and half. Mix well.
5. Pour over all. Bake as above.
Variation II: Twenty-Four Hour Sandwich
1. Prepare 12 slices of bread. Place 6 slices in a greased baking dish.
2. Cover bread with 3 cups shredded ham and 4 cups shredded Cheddar cheese. Top with remaining bread.
3. Combine eggs, mustard and salt with 3 cups half and half. Pour over layers. Bake as above.
This casserole is best when it stands 30 minutes after baking.
