Suggest a better descriptionNeed 4 cocotte dishes. Fill a deep skillet (electric skillets are great for this) with 2 inches water (about 1/2 way up the side of the crocette) and place 4 cocettes in the water. Heat and bring to a boil, then reduce the heat to low.
Grease the crocettes. Put a generous pinch of bacon in the bottom and top with a pinch of gruyere cheese. Break 2 eggs into each cocette, then top each with a quarter of the cream and another pinch of cheese.
Cover the cocotte and poach eggs by letting the water boil for 15 minutes for firm yolks.
Carefully remove the ramekins from the skillet. Season the eggs with salt and pepper, sprinkle parsley and serve immediately.
