Cook burgers on charcoal fire for best flavor.
Combine tomatoes with 1/4 cup oil, basil, parsley, garlic, salt and pepper. Allow to marinate for 1 hour.
Combine mayonaise with pesto and mix well.
Form ground sirloin into 4-6 equal patties. Season with salt and pepper.
Cook on grill to desired temperature. Medium rare to medium is recommended.
Slice each Focaccia roll in half. Spread olive oil on tops of bread. Toast on grill on all sides.
Layer pesto mayonaise, roasted pepper, marinated tomato and mozzarella cheese on inside of sliced foccacia roll and heat until cheese is melted.
Sandwich the burger in the foccacia roll with all ingredients. Cut in half and enjoy.
