Use any leftover to heat up and toss with pasta. Makes a great fresh tomato pasta sauce.
Brush baguette slices with olive oil. Place on baking sheet, and bake in 350° till brown (about 15 mins or so). Rub with garlic halves.
Put the EVOO and minced garlic in a large bowl. Let sit for an hour or so. Add the vinegar and whisk well.
Add the remaining ingredients, put in the fridge for a while for flavors to blend.
Salt and pepper to taste.
Place approximately 1 tbl of mixture on the baguette slices.
