1. In a saute` pan, render the bacon until crispy. Remove from the pan and set aside.
2. In the remaining bacon fat, caramelize the onions.
3. When the onions are a rich golden brown add the garlic and saute` for a few minutes.
4. Add the brussel sprouts and cook them until they are wilted.
5. Adjust the seasoning.
