Smooth, creamy and delicious!
1. Line a baking sheet with waxed paper; set aside.
2. In a medium bowl, mix peanut butter, softened butter, vanilla, and confectioner's suger with mixer or hands to form a smooth, stiff dough. Shape into balls using two teaspoons of dough for each ball (3/4 to 1" in diameter). Place a wooden toothpick into each ball, then place on prepared pan and refrigerate for a minimum of two hours.
3. Melt shortening and chocolate together in a double boiler, stirring occasionally until smooth. Alternately, you can melt it in the microwave if you are very careful. Using 50% power, microwave for 30 seconds; stir. Repeat until almost melted, then stir until last pieces melt.
4. Remove balls from refrigerator. Dip each one into chocolate where about 3/4 of the ball is covered, but a circle of peanut butter remains showing on the top. Return to wax paper, chocolate side down, and remove toothpick. Use your finger to smooth over the hole where the toothpick was. Repeat with remaining balls. Refrigerate for 30 minutes to set. Store in refrigerator.
Notes: The dipping works best when the balls are very cold, so you should work in small batches. I have increased the chocolate mixture by 50% over the original recipe so that there would be plenty to work with.
