Mix togetther the buckwheat flour , salt, eggs and cold water and the melted butter.
Let the batter stand for two hours.
The batter should be quite thin if too thick add more water.
Cook the galette in a large non stick pan, making the gallette as thin as possible.
Cook first side
Flip when heated through evidenced by bubbles through galette
Place Cheese Ham or other ingedients on cooked side while uncooked side browns up.
Fold in four corners or in half and serve
