In medium pot, add butter and heat until melted. Add cream cheese, continue to heat and stir until combined. Add preferred buffalo sauce and Blue Cheese OR Ranch Dressing depending on preference, and stir until combined. Add one cup Cheddar Cheese and stir, once thoroughly combined turn off heat. Sauce is now ready.
For Buffalo Dip - Mix into one tray of shredded chicken (Approximately 3.5lb) and top with remaining cheese. Bake for 35-45 min or until cheese is golden brown.
For wings - Dip wings in sauce to coat, return wings to grill/oven after coating if desired.
I use a stand mixer with a flat beater attachment to shred the chicken for easy and consistent results. Must be done while chicken is still hot.
