All the deliciousness of what is arguably America's favorite bar snack piled high on flatbread and baked pizza-style is impossible to resist. Make this and cut it into small slices for a tantalizing game day appetizer, or enjoy it with a side salad for a meal that rivals what you'd get from the local pizza parlor. The celery and carrot sticks that are standards with the blue cheese dip that served with Buffalo chicken wings are used as a wonderful veggie base on this flatbread crust. Swap crumbled feta or goat cheese for the blue cheese and parsley for the cilantro if you'd like. Like it hot? Sprinkle with red chili flakes to up the spicy quotient.
Preheat oven to 375°F.
Place flatbread on baking sheet; bake 2 minutes. Meanwhile, in a small bowl, combine chicken with 2 -3 Tbsp hot sauce.
Sprinkle flatbread with mozzarella cheese; top with chicken. Sprinkle with carrot and celery; crumble blue cheese over top and drizzle with more hot sauce (optional). Bake until heated through and cheese is melted, 4-5 minutes. Remove from oven; sprinkle with cilantro.
