Dice chicken. Toss in bowl with 1/2 buffalo sauce to coat.
Let sit for one hour, stirring occasionally.
Preheat oven to 350(F).
Simmer whole bowlful in pan on medium heat until the chicken is cooked.
Toss with extra buffalo sauce.
Cook pasta in boiling water. Drain.
Mix cheddar, monterey jack, and blue cheese (crumble) together. Set aside 1/2 cup of cheese.
Add sour cream & black pepper.
In saucepan, melt butter over medium high heat. Whisk in flour. Keep whisking until it boils for 2 minutes. Whisk milk in.
Mix flour sauce into cheese. Stir in pasta. Fold in chicken.
Pour into 9x13 casserole dish.
Using fork, mix breadcrumbs, cheese, and buffalo sauce till it crumbles. Crumble over pasta.
Bake for 30 minutes.
