1. for the meatballs: preheat oven to 400 degrees. line a baking sheet with parchment paper and spray with cooking spray.
2. combine the chicken, breadcrumbs, celery, hot sauce, egg, green onions, garlic and some salt and pepper in a bowl. gently mix until combined - do not overmix. using a tablespoon measure or scoop, remove scoops of the mixture, roll into balls and put onto the prepared baking sheet. bake until cooked through and browned, about 15 minutes.
3. For the sauce: while the meatballs are cooking, in a sauce pan over medium-low heat, melt the butter with the hot sauce, stirring to combine. once the meatballs are cooked, add to the sauce and coat well.
4. transfer the meatballs to a platter, sprinkle with the gorgonzola and cover with extra sauce. serve with celery sticks, toothpicks and ranch dressing.
