Preheat oven to 400 degrees
In a large saucepan, heat oil over medium-high heat. Add mixed vegetables and onion; cook, stirring occasionally, until tender, about 5 minutes. Stir in flour; cook for 1 minute Gradually whisk in cream until smooth. Bring to a boil; cook until slightly thickened, about 3 minutes. Whisk in cream cheese, hot sauce, salt, and pepper until smooth. Stir in chicken. Pour mixture into a 13x9 inch baking dish. Place biscuit quarters on top of filling, and sprinkle with blue cheese.
Bake until bubbly and golden brown, about 15 minutes.
For two people, I will cut in 1/2 and put in 8x8 pan.
