Combine Chicken, Onion, Celery, Garlic, & Broth into your crock pot. Cover and cook on high for 4 hours OR low for 8 hours.
Remove Chicken from crock pot. Save 1/2 cup of the broth from the crock pot and toss the rest in the trash. (or compost)
Shred the chicken & put it back in the crock pot. Add the 1/2 cup of broth that you saved and the hot sauce. (Add carrots and celery if this is something you think you would enjoy)
Cook on high for 30 more minutes.
Dish chicken up on to tortillas, add toppings as preferred and enjoy
