Cut the chicken wings in the joints, separating the drum eye and the wing. Discard the tip of the wing.
Season wings with lemon juice, Worcestershire sauce, salt and pepper.
Steam until the skin turns opaque. Remove from steamer, cool and dredge with flour. Shake off excess flour.
In a separate bowl, mix the melted butter, vinegar, and hot pepper sauce. Season with salt and pepper. Set aside.
Deep fry chicken wings until golden brown, drop in butter and pepper sauce mixture. Turn to coat and transfer to a platter. Repeat process until all chicken wings have been fried. Serve with Bleu cheese dipping sauce, carrots and celery sticks.
