1. Cook 2 tiny roast (from Wal-Mart) for 4 hrs. OR 1 large roast in crock pot on High for 8 hrs. or on low if your crock pot overcooks. Cook in about 1 cup of water. After it is cooked, Shred the pork .....Mix the brown sugar & salsa & add to the shredded pork & heat thru.
2. Blend in blender. Taste. Thin with buttermilk, if necessary.
3. Combine rice, butter, garlic, lime peel, broth, water. Bring to a boil, cover, cook 15-20 mins. or until tender. Take off heat.
In a seaparate bowl combine lime juice, sugar, cilantro and pour over hot rice and stir.
4. Mix all ingredients together. This tastes better if made a little before serving. To serve: Layer burrito shell (I use cook & serve flour tortillas from Costco), pork mixture, rice, salsa, and then cilantro ranch dressing. Can top with cheese and lettuce. This is delicious.
