***Include rice & beans if making burritos / burrito bowls / nachos and omit veggies if making taco salad / nachos.***
MISE EN PLACE: (Rice & Beans) Chop cilantro; Juice lime = 1T juice; (Veggies) Slice peppers and onions; (Toppings) Shred lettuce and cheese
1) Sauces - Prepare pico de gallo and guacamole. Cover guacamole surface with plastic wrap, and marinate both in refrigerator.
2) Rice & Beans (optional) - Rinse and warm beans. Rinse rice until water runs clear. In a small saucepan, bring rice in water, (1tsp) oil, and salt to a boil over high heat. Boil until the water just skims the top of the rice, stir once, reduce heat to low, and cover (make sure no steam can escape). Cook 10 minutes. Turn off heat and rest 5 minutes. Fluff with a fork and mix in cilantro, lime juice, and (2tsp) oil.
3) Veggies (optional) - Heat oil in a large pan. Add pepper and onion and sauté 3 minutes. Remove vegetables from pan.
4) Meat - In the same pan, brown and prepare ground beef according to seasoning packet instructions.
***Serving directions***
Burritos / Tacos - warm tortillas and assemble. Roll up for easy eating.
Burrito Bowls - layer in a wide bowl.
Taco Salad - layer on a bed of lettuce.
Nachos - layer on a bed of tortilla chips.
