Quick, easy and healthy.
1. Place butter beans, lemon juice and eggs into a food processor.
2. Add remaining ingredients (through first hot sauce) and blend.
3. Spray 12 inch nonstick skillet with cooking spray and use medium heat.
4. Form six 4 inch patties. Then cook for 6 to 0 minutes or until thoroughly heated and lightly bronwed then turn over.
5. Meanwhile in a small saucepan, stir cornstarch into cold water until dissolved.
6. Add remaining ingredients and blend well.
7. Cook and stir over low heat for 3 to 4 minutes or until sauce is bubbly and slightly thickened. Serve warm over patties.
