Cream butter and sugar. Add vanilla. Hand mix in pecans, then slowly add 2 cups of flour. Check stiffness of dough and if necessary add remaining 1/4 cup flour. Roll into small balls and flatten. Bake at 350 degrees for 8 to 20 minutes, until light brown on bottom. When SLIGHTLY warm, roll in powdered sugar.
