1. Preheat oven to 500? with rack in upper third. Shisk together flour, baking powder and salt in large bowl. Add lard and coat well with flour mixture. Working quickly rub the lard between your fingertips until roughly half is coarsely blended and half remains in large flat pieces, about 3/4 in in size.
2. Make a well in center of flour and add buttermilk all at onece. Stir quickly with wooden spoon, just until mixture is blended and begins to come together into a sticky dough.
3. fImmediately turn out doughh onto a generously floured surface. with well floured hands, kknead briskly 8-10 times, just until a cohesive ball forms. With your palms, gently flatten the dough to an even thickness; then roll to a 3/4 in chickness, working from center of dough outward with a floured rolling pin.
4. dip a dinner fork in flour and pierce dough compleely through at 1/2 in intervals. Flour a 3 in viscuit cutter, and stamp out rounds as close together as possible, taking care not to twist cutter. Place rounds 1/2 in apart on parchment lined heavy baking sheet. Bake biscuits until crusty and rich golden brown, 10-15 min. remove from oven and brush w/melted butter.

2T cream of tartar
1T baking soda
Combine and sift 3 times. Store dry, airtight for up to 6 weeks.
