Suggest a better descriptionIn a large bowl add flour, baking powder, baking soda and salt and whisk together. Add cold butter and cut in using a pastry cutter until the butter is in small pieces.
Make a well in the center of the bowl and add the cold buttermilk.. The trick is to have all the ingredients as cold as possible an don't over mix. With the buttermilk in the center, using teh tip of a spatula or fork, push the flour mixture into the milk and mix lightly until all the flour is moist.
Dump everything out onto a counter and shape into a ball ggathering up all the flour and peices into the ball. Pat the ball into a rectangle and fold the rectangle into thirds. Do this twice.
Roll the dough out to be about 1/2" thick and cut out the biscuits using a 2 1/2" cookie cutter dipped in flour. Place the biscuits on a cookie sheet prepared with parchment paper. Press your thumb gently int the center of each biscuit to help them rise evenly. Brush with some buttermilk and place them into a preheated 425° oven
Bake for 15 minutes or until browned.
