Best we've found. Based on recipe from Southern Sideboards cookbook (Junior League of jackson, MS, 1978).
Mix dry ingredients together well. Separately mix eggs with buttermilk. Combine dry and liquid ingredients; then add butter (or margarine). Mix well but without overmixing; some lumps in batter are okay.
Bake on griddle until bubbles appear across surface; flip and brown on other side.
Makes more than enough for two persons. 10-12 approximately 6 inch cakes.
For best results, first heat griddle over high heat and then, before baking cakes, reduce the temp to no more than low to medium heat. Light cooking may help, depending on the griddle surface, but additional fat is not necessary. Bacon fat and bits may lead to mixed results.
