Asparagus grows wild in the subtropical valleys of Bhutan. It is cooked in a characteristically Bhutanese style: simmered in water, onion, melted butter and chilli, and topped with crumbled cheese
Melt the butter in a large frying pan.
Add the onion, asparagus and 240ml water; simmer until the asparagus is tender and the water reduced. Season to taste with salt and fresh ground black pepper.
Sprinkle the crumbled feta and sliced chilli over the top and serve immediately.
