Wash game hens, pat dry, inside and out, with paper
towels. Sprinkle skin and cavities lightly with salt and
pepper. Place about 1 tablespoon herb butter in each cavity.
Tie legs together. Melt remaining herb butter with lemon
juice. Place hens, breast side up, on a double thickness of
heavy foil, with 1-inch turned up to form shallow pan. Place
on grill, over glowing coals, cover barbecue and adjust drafts to keep fire burning slowly. Cook, basting occasionally with herb butter for about 1 hour or until tender and golden. When almost done, brush hens with warm apricot jam, cover and cook again until nicely glazed. (May also bake in oven for 1 hour at 350 degrees.)
Herb Butter: Blend 1/2 cup soft butter with 2 table-
spoons chopped chives and 1/4 teaspoon crushed rosemary.
