A combination of a number of recipes for cabbage rolls and cabbage roll casserole put together to suit my family's tastes.
Grease an 11 x 13 casserole dish.
Steam shredded cabbage until soft and tender
Line dish with 1/2 of cooked shredded cabbage
Fry ground beef and ground pork until cooked.
Drain and set aside.
Fry onion in same pan as you had fried beef and pork until onion is soft and tender
Add beef, pork, and 2 cups of cooked rice to onion in pan.
Add salt, garlic powder, can of tomato soup, and 2 cans of tomato juice to pan.
Heat until thickened.
Put beef/pork mixture on top of shredded cabbage already in dish.
Add the other 1/2 of the cooked shredded cabbage on top of the beef/pork mixture
Top with drained can of diced tomatoes
Top tomatoes with a layer of sauerkraut to taste.
Pour 1 can of tomato juice over all
Cover and bake at 350 degrees F for a least 1 hour.
Enjoy.
Freezes great in serving sizes once cooled.
I use a baking tray under the casserole dish while baking to prevent spills in the oven as this dish tends to overrun. Perhaps use a larger dish if you have one.
