Mock Caesar Salad - no anchovies
Blend 1st 3 dressing ingredients in blender. With machine running, gradually add oil in thin steady stream. Season w/salt & pepper. (Can be prepared 1 day ahead. Cover & chill. Bring to room temp before using.)
Combine lettuce, onion & croutons in large bowl. Toss w/enough dressing to season to taste. Sprinkle with cheese & serve.
1/2 cup lemon juice = approx 2 lemons; 1 cup fresh grated parmesan cheese = apprx 3 oz; See separate recipe for sourdough croutons
