Clean & brake romaine lettuce, peel - crush garlic and cut anchovies then rub in the bowl for about 2 minutes. In a separate glass bowl juice from 1 lemon, pinch of salt, dry mustard, olive oil, 1/4 cup grated cheese, 2 eggs yolks only (eggs to be placed in hot water for 2 minutes before adding). Stir mixtures for about 20 seconds. mix romaine in wooden bowl with garlic & anchovies, pour mixture, add balance of grated cheese & croutons and serve on cold plates.
