This is a very old recipe, but a classic Caeser Salad recipe. If you are nervous about the raw egg, you can omit it.
Make this dish immediately before serving!
In a large salad bowl whisk together the oil and egg to make an emulsion. Then add the lemon juice, mustard, pressed garlic cloves, and 1/2 the Parmesan cheese.
Tear the lettuce into bite-sized pieces and drop into the salad bowl. Fold everything nicely to coat each leaf of lettuce with the dressing. When finished, add the croutons and sprinkle the rest of the Parmesan cheese on top. Add Salt and Pepper to taste and serve.
Never make this ahead. If you like anchovies, it is a classic addition to this recipe. Start by whisking together the oil, egg. and smashed anchovies and then proceed from there.
