Suggest a better descriptionIn a small bowl, combine preserves, mustard and soy sauce. Place each chop between 2 pieces of plastic wrap. Pound with flat side of meat mallet to 1/2" thickness. Remove plastic wrap.
Pour half-and half into a shallow dish. In another dish, combine flour, cajun seasoning, and pepper. Dip meat in cream, then in flour, turning to coat.
In a 12" skillet, heat oil over medium-high heat. Add meat; reduce heat to medium. Cook, uncovered for 6 to 8 minutes or until meat is slightly pink in center, turning once. Serve with preserves mixture.
