Bring large pot of water to boil. Add salt and macaroni, stirring often. Cook until al dente (5 minutes). Rinse in cold water and leave in colander.
Grease casserole dish. Grate cheeses.
Heat 1 tbsp olive oil in a large sauce pan and add andouille. Cook until caramelized. Use a slotted spoon to remove to a plate line with paper towels. To the same pan/oil, add onion and celery and sauté until translucent. Transfer to plate of sausage.
Add 1 stick of butter and melt. Add flour and Cajun seasoning (1-2 tsp) and cook over medium heat, stirring constantly with a wooden spoon, for up to five minutes. Do not allow flour to brown. Using a whisk, add half and half slowly, whisking constantly to avoid lumps, until mixture is thick and smooth.
Remove from heat. Add cheese and stir well. If mixture is too thick, add more half and half.
Add macaroni to pan or pot, plus sausage mixture and Dijon mustard. Stir to combine well and season with salt and pepper.
Pour the mixture into the casserole dish and top with bread crumbs. Bake until golden brown, about 25 minutes.
