dice up all produce into small pieces
Melt 6 T of butter over med hi
Toss in your onion, celery, bell pepper, and garlic. Add 1 T salt
Cook for 3-4 minutes, add spices
Add 1/2 C ketchup
cook for few more minutes then remove from heat, add milk
add breadcrumbs to make a paste
continue adding until you get a thick paste.
Mix meats together
Whisk 3 eggs and add to meat mix
Begin incorporating veg/bread mixture into meat
Using your hands, form your meatloaf mixture into a meatloaf, on a sheet pan. You could use a little non-stick spray here. Around 8-10 inches wide x about 1 1/2 inches thick.
Mix together 3/4 cup of ketchup with about 2 tablespoons of honey.
Bake at 400 for 40 minutes
