Chop the onion green onion and celery; place in a bowl and set aside. Add a small amount of oil to a large pot to coat the bottom. Add the ground beef and sausage and cook until there is a mix of brown and pink, then add the vegetables. Add the Cajun seasoning, salt, pepper, and garlic powder. Cover and cook on a medium low heat stirring occasionally for roughly 20-30 minutes. Shred the cabbage into small strips and place in a bowl. After 30 minutes drain the meat mixture into a strainer and add back to pot. Add shredded cabbage to the pot on top of the meat. Mix the chili sauce and soy sauce together and pour evenly into the pot and cover. Periodically check every five minutes until the cabbage is completely soft. Once the mixture has cooked down turn the heat off, drain. Put mixture into freezer to cool if you’re rolling next.If you plan to roll the next day you can put mixture in the fridge to cook. When the mixture has cooled (it may take an hour) you can begin wrapping. Scramble an egg into a bowl. Follow the directions on the wrapper package on how to roll. About midway through wrapping egg rolls heat about a half inch of oil in a frying pan. Before frying you can use a leftover wrapper to test that oil is not too hot. When frying watch the bottom layer of the eggrolls. As you start to see a golden color you want to flip them. Once they have a nice golden color all around the place egg rolls to the side and a large dish layered with some paper towels.
