• Slice sausage and brown both sides in a pan with a little oil. Add diced onion, celery and green pepper, cook until soft. Add in garlic during the last 5 minutes.
• add in soaked beans (drained), 7 cups of stock and remaining ingredients. Bring to a boil and then reduce to a simmer for about 2-3 hours or until the beans and soft and cooked through.
• Once the beans are ready, remove 1 cup (beans & gravy only!) and puree with a little stock, add back into the pot. This makes your red beans creamy! You can also smash them on the side of the pot with your spoon but this is easier for me. Once everything is incorporated and heated through your red beans are ready to eat! Use remaining stock to thin if desired.
*Quick Soak Instructions: Add 1lb of dried beans to a pot with 2-3x the amount of cold water. Bring water and beans to a boil and then turn off the heat. Leave covered for 1 hour. Your beans will look wrinkly.
