Suggest a better descriptionPreparation Time: 0:25 Saute the onion, green pepper, scallions, garlic, and mushrooms in a small amount of water for 5 to 10 minutes. Add the remaining ingredients (except for the rice) and mix well. Stir in the cooked rice, heat through, and serve. NOTE: Some Commerical Cajun spice mixes are now available. To make your own Cajun spice mix, combine 3 tablespoons paprika, 2 teaspoons onion powder, 2 teaspoons ground black pepper, 2 teaspoons ground white pepper, 2 teaspoons cayenne, 1 teaspoon ground dried oregano, 1 teaspoon ground dried thyme, and 1/2 teaspoon celery seed. Mix together and store in a tightly covered container. Makes about 1/3 cup. NOTES : I added 1 cooked link of turkey kielbasa, sliced and 1 cup precooked, frozen shrimp. Tasted just like jambalaya!!
