Received this recipe from a friend and it's been one of my favorites ever since. It's great to make ahead, freeze, and quickly thaw when I'm rushed for dinner plans. And when made with turkey sausage instead, it's a very healthy option for those watching calories!
1. In a large pan, saute veggies in butter until soft, stirring frequently.
2. Add the remainder of the ingredients to the veggies, bring to a slow boil and simmer 30-45 minutes, stirring every 10 minutes.
3. If desired, some beans can be mashed against the side of the pan to thicken the sauce.
4. Serve over long grain rice.
*For a lighter recipe, turkey sausage offers half the fat/calories and almost the same taste.
**Add 1-2 teaspoons cayenne pepper for a little more spice
