Suggest a better descriptionBlanche the CLEANED calamari in plenty of boiling salted water until turning opaque (about 1 - 1.5 minutes). Drain and cool in ice water to stop cooking process and drain again thoroughly.
Whisk together the lemon juice, oil and apple cider vinegar then add all other ingredients.
Refrigerate for at least an hour, preferably longer, before serving to allow the flavors to combine.
Note: For most recipes I omit salt. Those used to using salt will probably want to add salt.

This recipe seems a bit sensitive to getting just the right amount of tartness form the lemon juice and vinegar. As always, it's easier to add than it is to remove, so it may not be a bad idea, until you've got this down pat to taste, to add only part of the lemon juice and adjust.
