This is almost like a vegetable rice square. It is easy to make and is a different take on rice as a side dish. Serve hot or cold.

1. Rub large shallow baking pan w olive oil.
2. Mix all ingredients in a large bowl then spread in the prepared pan evenly.
3. Heat slightly 1 well beaten egg white. Pour over the top.
4. Sprinkle Parmesan cheese over the top.
5. Bake in a 375 degree oven about 45 minutes or until set.
5. Cut into 2 inch squares.
1 cup of chopped onions yields 2/3 cup of cooked onions.Onions can be cooked with the rice if you prefer non-sauted onions.
