Combine turkey, cilantro, bread crumbs, mustard, egg, salt and pepper in large bowl. Shape into 4 patties, pressing firmly.
Place patties on oiled grill. Grill over high heat 15 minutes or until no longer pink in center. Top burgers with cheese during last few minutes of grilling. Grill pepper rings 2 minutes. To serve, place burgers on buns and top with pepper rings. Serve with additional mustard, if desired
