A simple Gratin of sweet potatoes and ham. A perfect easy cook meal while relaxing on vacation.
Using coals, preheat cast iron dutch oven to 325F. This recipe calls for an increase of heat, so make sure you ignite enough coals to increase oven temperature for an additional 30 minutes.
Melt butter and saute onions until translucent. Whisk in flour to create a roux. Gradually add milk, stirring constantly until thickened. Add pepper and season salt. Mix in ham and sweet potatoes until coated well. Add cheese and mix well to incorporate. Top with bread crumbs. Cover and increase heat to 400F. Bake for 25-30 minutes.
