Peel ginger and slice into 1/4" thick pieces. Measure amount of ginger in measuring cup and use same amount of sugar and water. For example, if you have 2 cups of sliced ginger use 2 cups of sugar and 2 cups of water. Put sugar and water into large saucepan and bring to boil over high heat. Add ginger pieces, lower heat to produce a good simmer and cook, stirring occasionally, for about 45 minutes or until ginger is tender, almost translucent, and sweet. Remove ginger with slotted spoon to cool and drain. When cool put pieces in zipper bag with more sugar and shake to coat.
Continue simmering ginger sugar water until thick and syrupy, remove from heat and let cool. When cool put into glass jars and refrigerate.
Store candied ginger in tightly covered glass jar. Canning jars work well
