Try this candied yams recipe.
Preheat oven to 350 degrees.
Place potatoes in a large Dutch oven, and cover with water; bring to a boil. Reduce heat, and simmer 15-20 minutes until just tender on the outside and still firm on the inside. Drain; let cool. Peel and slice potatoes.
Layer in a 13x9" baking dish beginning with brown sugar, butter, spices and then potatoes and repeating ending with sugar, butter and spices. Sprinkle top with lemon rind and lemon juice and vanilla. Cover and bake at 350F for 30-40 min or until tender. Spoon syrup over potatoes 1-2 times during cooking and before serving.
