This recipe results in either caramelized (sugared) or candy coated pecans or walnuts.
Combine all ingredients in a 2 quart non-stick saucepan. Over medium heat stirring occasionally until the sugar becomes dry and *grainy, about 15-20 minutes. Then lower the heat to medium low and allow the sugar to melt again and coat the nuts, another 10-15minutes. Spread the nuts onto a sheet of parchment and quickly separate the nuts. These are what I called candied. Let cool and store in the freezer until needed.
*Note: at this point you can dump the nuts onto a cooling rack, allowing the loose sugar to fall off the nuts. Separate and you have sugar coated (caramelized) nuts.
